It is a possessive, technically, so it gets the apostrophe.

I just couldn't wrap my head around it being possessive, but I had a feeling I was probably wrong. ;)

According to the search I did on Web MD the medical community seems to think the possessive is correct. I'm assuming the part was named because only men have it and the "first man" was named Adam. Thus, "Adam's Apple", an apple belonging only to Adam and his sons.*shrug* Whatever... it's a silly name for a part.
