Pot roast

I have 2.75 lbs of chuck roast, veggies, and a crock pot (or a dutch oven, if that's too small). Anyone have tips/favorite recipes for pot roast? I've made one before, but I always like experimenting.

I usually just toss it all in there with a can of beef gravy and a can of mushroom gravy and let it cook a looooog time! (And if 2 cans of gravy isn't enough, just add another can of beef.)
When do we eat? (I'll bring the "Sister Schubert's Yeast Rolls"..they're yummy!)
